Sunny Sunday

Finally,  Sunlight is shining through the windows and besides brightening a room it also brightens my mood.   Nice to see it warmer today finally.
I decided to make rolls today because I didn't buy any at the store for the burgers we were having.  Easy recipe and very soft rolls for hamburgers.

I could slather a huge hunk of butter on one at this point and enjoy.
I didn't do that this time.

I mixed green pepper with onion and an egg with lean ground beef.   These great tasting rubs were sent to us at Christmas from Steve's son and wife.   This is my favorite as it has coffee crystal in it.   I always use coffee in my baked beans and it's good in hamburger also.

A pot of navy bean soup with celery , onion, green pepper, hickory smoke salt and pepper.  I made this in 25 minutes in my elite pressure cooker that I use every time I make dinner.   Love this.
I can wash the dried beans,  throw them in the pot with water and spices.   Set it for 25 minutes and it's done.   No soaking the beans for any length of time or over night.

Mine wrapped in a large lettuce leaf with condiments.   Holds together well and since I am watching what I eat to lose some extra pounds,  the lettuce works just fine.

Dressing

I used orange juice to my taste or liking along with Balsamic vinegar, chopped garlic, vegetable oil (prefer olive oil but am out at the moment)  couple T.  water and shake really well.   It will taste even better tomorrow.

sunday eats

Steve and I took  a trip to Paughs orchard in Quicksburg Va.   We go there every year,  the best apples at the best prices.   Will show some pics of that later.
We visited several areas and one was Mt. Jackson and this nice country grocery store that had red hots for my apples and Va. ham for my navy bean soup that I was planning to make when I got home "and did"  I bought the beans there too.  Very reasonably priced store and had so many nice packaged goods.  
 
I put the ham,  1 pound of dried navy beans with cut fresh carrots, onion - to my liking, celery seed, quart frozen tomatoes from garden and pepper in my electric pressure cooker - selected the beans and grain setting , was ready in about 20 minutes I guess.   I didn't time it myself , I just let the cooker do the work.  No need to soak overnight or cook for hours this way.

tomatoes, sharp cheese, spinach leaves, pecan slices and raspberry vinaigrette was what I had , so I threw together with the dressing and tasted pretty good together.

not sure how much flour , maybe 2 cups with oatmeal sprinkled in the mix
 baking powder,  I always just sprinkle it in,  I make these so much that I do not measure anymore,  salt ( a smidgen)

buttermilk ( I had to mix vinegar with milk for that- as I have none on hand)
then mixed lightly and put on board to cut into rounds
I baked at 400 til risen and little brown.
I always bake my biscuits on cornmeal sprinkled stone,  they don't burn and always taste better - to me anyway with the cornmeal on bottom
