Tomatoes

My daughter visited last week and brought me some tomatoes to can from her green house garden.
I did just that.

More to can

I am keeping this stove downstairs to use for canning.  Our new stove has glass top and it would just not be good to regulate the temperature to can..Not for me anyway. 


These pears I will use to make pear butter.

Tonight I had fried tomato BLT.  I used cornstarch and a little corn meal mixed with it to lightly fry to use in salad.  I had a salad like this in Savannah and I totally loved it.

Well now I will start readying the peppers to make pepper jelly.

Wow, Betsy, your canning looks great. I used to can tomatoes years ago and they taste so much richer than canned ones from the store! I don't have a source now other than the market. Your pepper jelly sure sounds good. The salad sounds delicious and I can just bet it was ! ♥

That's a beautiful salad! I bet fried green tomatoes would be good in the salad too. I sure miss my canning and pickling days. Your jars are pretty as jewels!

What a bounty! And how wonderful it will all taste this winter. I love fried green tomatoes but have never made them myself. I don't think I'm "southern enough" yet!

Thay are so easy to make and so good. I don't like mine real green, more reddish as they are tastier.

Dearest Betsy,
That is a bountiful gift for starting to can for enjoyment later in winter time.
I've always used my electric oven for canning. In a water bath, works nice and evenly. Then putting the jars on their head for a few minutes to remove any air bubbles and turning it around.
Your recipe looks really inviting for a bite... especially around lunch time!
